Für die Rezeptierung lassen wir Kaffee gerne mindestens eine Woche entgasen, er ist im Moment also noch zu frisch. Das Rezept findest du hier in circa 1-2 Wochen.\u003c\/p\u003e\n\u003ch2\u003eWarum haben wir den Kaffee eingekauft?\u003c\/h2\u003e\n\u003cp\u003e2013 besuchten wir zum ersten Mal die Ichamama-Kooperative. Die Begegnung mit den Menschen bleibt uns in sehr guter Erinnerung. So kaufen wir auch Jahr für Jahr die frische Ernte und sind begeistert von der stets überzeugenden Qualität. 2014 wurde Benjamin mit dem Ichamama-Kaffee Schweizer Meister im Brewers Cup. Felix hat im Oktober 2022 damit an der Schweizer Meisterschaft mitgemacht und Höchstnoten für den Kaffee bekommen.\u003c\/p\u003e\n\u003ch2\u003eWarum schmeckt der Kaffee so, wie er schmeckt?\u003c\/h2\u003e\n\u003cp\u003eEiner der spannenden Nebeneffekte einer langjährigen Partnerschaft ist, daß wir das Geschmacksprofil dieses Kaffees aus vielen anderen heraußchmecken. Gleichwohl ist es immer wieder überraschend, wie sich verschiedene Geschmacksnoten von Jahr zu Jahr mehr oder weniger zeigen. 2014 schmeckte der Kaffee wie ein Rhabarber-Kompott, 2017 war er die flüssige Grether's Pastille, 2021 dominierten Brombeeren das Aroma, in diesem Jahr sind es eher wieder rötliche, säurehaltige Beeren. Wir schmecken Himbeeren, Hagebutte, Rhabarber und helles Karamell.\u003c\/p\u003e\n\u003ch2\u003eWie rösten wir diesen Kaffee?\u003c\/h2\u003e\n\u003cp\u003e\u003cmeta charset=\"UTF-8\"\u003e\u003cspan\u003eWir rösten den Kaffee als 12,5-kg-Batch im 30-kg-Giesen-Röster, mit einer Röstzeit von 9 Minuten und einer Entwicklungszeit von 1:10 Minuten. Wir gehen mit 65 % Energie in die Röstung, gehen nach 5 Minuten graduell runter und lassen das Gas offen – bis zum Schluss.
