For the recipe, we like to let coffee off-gas for at least a week—it's currently still too fresh. You'll find the recipe here in approximately 1-2 weeks.\u003c\/p\u003e\n\u003ch2\u003eWhy Does the Coffee Taste the Way It Does?\u003c\/h2\u003e\n\u003cp\u003eIt can get noticeably cool in the Sierra de Zongolica. Behind Orizaba, the first hills rise up and continue to climb, until you reach the rugged valleys of the Sierra. The slopes are steep, and clouds hang visibly among them. When the sun is out, the valleys heat up considerably. This makes coffee cultivation challenging, especially for Naturals.\u003c\/p\u003e\n\u003cp\u003eThe cherries are picked and fermented in plastic bags before drying on raised beds. Because it's often cool, drying takes a very long time. And because it's often damp, the risk of fungal growth increases. Special care is required here.\u003c\/p\u003e\n\u003cp\u003eThis all shows in the flavor: The fresh, juicy acidity comes from the growing conditions, because the cool temperatures allow the cherries to ripen slowly. The 90-hour fermentation emphasizes a fresh fruit character focused on red fruits, without overwhelming the acidity. The silky, elegant texture comes from careful harvesting and manual sorting of the cherries.\u003c\/p\u003e\n\u003ch2\u003eWhy Did We Buy This Coffee?\u003c\/h2\u003e\n\u003cp\u003eSince 2022, we've been working with Ensambles and the producers of Citlal Kafen to improve coffee quality and strengthen the cooperative. The Toca is the washed cooperative blend. But the goal was always also to produce microlots.\u003c\/p\u003e\n\u003cp\u003eFor this, individual lots of particularly high-quality coffee cherries are separated, fermented, and dried in the cherry as Natural. This is a new process, not only for the cooperative, but for the entire region.\u003c\/p\u003e\n\u003cp\u003eFor long-term projects that are meant to create lasting change on the ground, it's important that they produce coffees that are sensorically in the Champions League. This is the first lot that the young cooperative has processed this way.
