Suelen ser cafés lavados alrededor de 84 puntos, que tostamos un poco más oscuro que nuestros otros cafés de filtro. Rotamos los cafés estacionalmente, para poder tostar siempre la cosecha actual de nuestros socios para ustedes.\u003c\/p\u003e\u003cp\u003ePara este café, las cerezas de café se fermentan 19-48 horas después de la cosecha, luego se despulpan y se lavan. Para desarrollar este perfil de tostado hicimos dos cosas diferentes a cuando tostamos otros cafés lavados: Primero, aumentamos el tamaño del lote en 2,5kg, lo que alarga un poco el tiempo de tostado y hace el café un poco más suave. El encuentro con la gente nos dejó un muy buen recuerdo. Por eso, año tras año, compramos la cosecha fresca y estamos entusiasmados con la calidad siempre convincente. En 2014, Benjamin se convirtió en campeón suizo de la Brewers Cup con el café Ichamama. Sin embargo, siempre es sorprendente ver cómo diferentes notas de sabor se muestran más o menos de un año a otro. En 2014, el café sabía como una compota de ruibarbo, en 2017 era la pastilla Grether's líquida, en 2021 las moras dominaban el aroma, y este año son más bien bayas ácidas de color rojo.
