Apúndaro se situe exactement à la frontière entre deux zones climatiques qui ne pourraient pas être plus différentes. À l'est de la ville, les montagnes s'élèvent, à l'ouest, elles plongent dans un paysage désertique. C'est là, où la chaleur et le froid se rencontrent, que se trouve la ferme d'Alejandro Cerano. Des pins de montagne poussent à côté des arbustes des terres basses. La situation est aussi irréelle parce que la saison sèche est longue ici: cette région a peu en commun avec Veracruz, la région caféière sur la côte est du Mexique.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eSur 3 hectares, Alejandro cultive le café ici. Il nourrit le sol avec du compost de vers, arrose les plantes par irrigation goutte à goutte et sèche les cerises de café entières sans les dépulper. L'altitude et la croissance lente donnent au café une acidité juteuse qui nous rappelle les pommes. Le processus natural crée une texture très ronde et une fruité fin.
