Für die Rezeptierung lassen wir Kaffee gerne mindestens eine Woche entgasen, er ist im Moment also noch zu frisch. Das Rezept findest du hier in circa 1-2 Wochen.\u003c\/p\u003e\n\u003ch2\u003eWarum schmeckt der Kaffee so, wie er schmeckt?\u003c\/h2\u003e\n\u003cp\u003eDer Kaffee stammt von zwei Farmen aus unserem Nicaragua-Netzwerk in Dipilto, auf 1200 bis 1500 m.ü.M. Von Mario Gonzalez kommt der Parainema-Anteil, von Hipólito Acuña der Maracaturra- und Java-Anteil. 20% davon werden klassisch gewaschen aufbereitet, 80% im Carbonic-Maceration-Natural-Verfahren von BridAzul. Claudia von BridAzul hat den Blend so zusammengestellt, dass die Bohnen möglichst großbohnig und einheitlich sind, was die Röstung gleichmäßiger macht. Geschmacklich bringt der CM-Natural-Anteil die leichte Frucht, der gewaschene Anteil das klassische Dipilto-Schokoladenprofil mit feiner Säure.\u003c\/p\u003e\n\u003ch2\u003eWarum haben wir den Kaffee eingekauft?\u003c\/h2\u003e\n\u003cp\u003eWir suchten einerseits einen schweren, schokoladigen Espresso für unser Decaf-Sortiment. Andererseits vertiefen wir damit die Arbeit mit bestehenden Partnern: BridAzul hat den Blend gezielt für die Entkoffeinierung entwickelt, und eingekauft haben wir das Lot gemeinsam mit Per Nordby von Kafferäven in Göteborg.
