Few brewing devices enjoy cult status like the AeroPress. The AeroPress offers enormous versatility and excellent results. It's easy to use, and with so many possibilities for experimentation, it provides a steep learning curve.

You can completely control the contact time between water and coffee. Other important influencing factors such as temperature, pressure – with which the water is ultimately pushed through the coffee – the agitation in the AeroPress, and the choice of filter can also be individually determined.

Felix's Master Recipe – the AeroPress Brew Recipe

We love the AeroPress, and Felix especially does. In 2015, Felix was the Swiss AeroPress Champion and represented Switzerland at the World Championship in Dublin, and he shares his recipe:

1. Ingredients:

  • 25 g coffee - relatively coarse grind (see example in the video below)
  • 100 ml water (97 °C)

2. Preparation:

  • Add water in 20 seconds.
  • Stir the water evenly for 20 seconds.
  • Screw on the filter and release air (should be done in 20 seconds).
  • After a total of 60 seconds, invert the AeroPress.
  • Press for 30 seconds until 1:30 min.
  • Then add 100 g of water (bypass).

This AeroPress recipe with the bypass method has brewed many great cups. Felix Hohlmann used it to become Swiss AeroPress Champion 2016. The recipe was also successfully used with slight modifications at the German AeroPress Championship. Swiss filter coffee champion and later world champion Emi Fukahori also brewed with the bypass method in the Compulsory Service of the Brewers Cup in 2018.

What is the bypass method?

The bypass method is particularly suitable when coffee brewed with a "normal" method tends to become too bitter. When working with bypass, you don't force all the water past the coffee, which extracts less. Instead, you add a portion of the water to the concentrate after brewing.
