Few brewing devices enjoy cult status like the AeroPress. The AeroPress offers enormous versatility and excellent results. It's easy to use, and with so many possibilities for experimentation, it provides a steep learning curve.

Advantages of the AeroPress:

You have full control over the contact time between water and coffee. Other important variables such as temperature, pressure – with which you ultimately press the water through the coffee – agitation within the AeroPress, and the choice of filter can all be individually determined.

Felix' Master Recipe – the AeroPress brewing recipe

We love the AeroPress, and Felix especially does. In 2015, Felix was the Swiss AeroPress Champion and represented Switzerland at the World Championship in Dublin. Here he shares his recipe:

1. Ingredients:

  • 25 g coffee - relatively coarse grind (see example in the video below)
  • 100 ml water (97 °C)

2. Preparation:

  • Pour water in 20 seconds.
  • Stir the water evenly for 20 seconds.
  • Screw on the filter and release the air (should be done in 20 seconds).
  • After a total of 60 seconds, turn the AeroPress.
  • Press for 30 seconds until 1:30 min.
  • Then add 100 g of water (bypass).

This AeroPress recipe using the bypass method has brewed many great cups. Felix Hohlmann used it to become the Swiss AeroPress Champion in 2016. The recipe was also used successfully with slight modifications at the German AeroPress Championship. Swiss filter coffee champion Emi Fukahori, who later became World Champion, also used the bypass method in 2018 during the compulsory service of the Brewers Cup.

What is the bypass method?

The bypass method is particularly suitable when coffee tends to become too bitter with "normal" brewing methods. When working with a bypass, you don't force all the water through the coffee, which results in less extraction. Instead, you add a portion of the water to the concentrate after brewing.
