What is Cascara?

Cascara refers to the dried pulp of the coffee cherry that surrounds the coffee bean. In coffee production, this pulp is often considered a waste product, but for cascara, it is carefully dried and processed into an aromatic tea.

In traditional growing regions such as Yemen, Bolivia, and Panama, coffee cherry tea has a long tradition and is often refined with spices like cinnamon, ginger, and cardamom.

Sustainability and Local Value Creation

A prominent feature of cascara is its sustainable use: The pulp of the coffee cherry, which would otherwise be considered a waste product, is reused, thereby conserving valuable resources. This method not only contributes to environmental protection but also increases the value of the coffee cherry throughout the entire production chain.

Our Cascara Coffee Cherry Tea comes from our partner farm Brida Azul in Nicaragua: For the first time, they specifically dried the coffee cherries for us, resulting in a fruity and aromatic infusion with natural sweetness.

The Legal Status of Cascara in the EU

Cascara has been classified as a "Novel Food" in the EU. This means it had to undergo a safety assessment before it could be approved for sale.

The confusion that there was a "ban" on cascara in 2017 likely stems from the fact that the product was not yet officially approved at that time. So, it was not banned, but the approval process had not yet been completed, which meant it could not be freely sold. Only with final approval in 2022 was cascara allowed to be sold as food in the EU.

Preparation of Cascara Tea

Preparing cascara is incredibly simple and similar to brewing a fruity tea:

  1. Pour 500 ml of boiling water (optimal brewing temperature: 95 degrees) over 10 g of cascara.
  2. Let steep for 10 minutes.
