Why does Raul's Choice taste the way it does?

The Gara Kogne Washing Station is located in the Refisa district at a respectable 2020 meters above sea level and produces exceptionally good, dry-processed coffees. The coffee plants grow between 1950 and 2150 meters above sea level and benefit from cooler temperatures. These are optimal conditions for the slow ripening of the coffee cherries, resulting in a denser, sweeter, and more complex cup profile.

After the manual harvest, 120 kg of cherries are laid out in 5 cm layers on each raised drying table. The drying tables are located in a location with particularly strong winds and less sunlight, allowing the coffee to dry slowly without mold. The drying process takes approximately 21 days.

How do we roast this coffee?

We finish roasting the coffee in 8:39 minutes. With a slightly shorter development time of 6.7% and a slightly higher final temperature of 189°C, we emphasize the inherent qualities of the coffee: plenty of fruit, lively and juicy acidity, and a creamy body.
