On October 13, 2024, the coffee makers' roastery achieved a historic victory. Not only did Sofia become the first woman to win the Swiss Roasting Championships, but with Raúl, Juan, and Philipp, we also took second, fourth, and fifth place, respectively.

With the Roaster's Choice, we celebrate this special moment together. Winner Sofia and runner-up Raúl each selected a coffee that they personally consider worthy of the title " master ." A green coffee whose exceptionally precise processing impressed them.

They will roast their respective coffees for you with the same passion and precision. There are 350 of the limited Roaster's Choice Bundle available.

Sofia's Choice - 250g espresso from Rwanda

An espresso for a memorable cappuccino – that was Sofia's wish. Sometimes, coffees with fruity aromas struggle to achieve a balanced and characterful symbiosis with cow's milk, and especially with oat milk. What our gold medalist Sofia discovered and how she roasted the coffee elicited countless "mmms" from our team. A natural Red Bourbon coffee reminds us of tangerines, blossom honey, and caramel , and its creamy texture puts us on cloud nine. A coffee from the Bumbongo Washing Station in Rwanda, complex as an espresso and perfect for the beloved milk drink.

Raúl's Choice - 250g filter coffee from Ethiopia

Raúl is passionate about brewing a wide variety of filter coffees and is very willing to experiment. But he finds his homesick coffee, his feel-good moment, his bliss in green coffees like this Natural from Ethiopia . The juiciness and the delicate, clear aroma of strawberries and blueberries instantly transport us to a cozy armchair on a lovely veranda, surrounded by fragrant magnolias and lavender and the summer morning sun on our faces. Precision work by the Gara Kogne Washing Station in West Arsi inspires and simply makes us happy.

Water: Total hardness 3 °dH , alkalinity 1.5 °dH (more on the topic of coffee water )
Mill: Kinu M47 Classic
Dripper: Hario V60 glass filter 02
Filter paper: Hario V60 paper

This is how we would prepare Sofia's Choice

Our David developed and optimized the recipe with the following equipment:

danke für dein Feedback. Es handelte sich hierbei um ein Spezial, was nicht ins Sortiment aufgenommen wird.
Dennoch habe ich es gerne an die Rösterei und die Röstenden zurück gemeldet.

Frühlingserwachen

Erster Aufguss, und erster Geschmackseindruck;
Ein Kaffee, der mich mit nimmt. Sehr klar in den Geschmacksrichtungen, ein echtes Frühlingserwachen. Passt super zur Zeit. Schön in den fruchtigen Noten, die Säuren sind so angenehm, das auch nach mehreren Minuten diese immer noch ein fruchtiges Aroma im Mund bilden, ohne in metallisch oder wässrig abzurutschen. Die Exraktionzeit habe ich nicht auf den Punkt bekommen, etwas längere Zeit. Und Trotzdem ist dieser Kaffee herausragend. Er ist so klar strukturiert, das ich das Gefühl habe, das Filterpapier herauszuschmecken? Nicht so schön fürs Papier. Ist aber nur meine subjektive Meinung als nicht Experte.

Schmeckt schon

ziemlich gut. Für eine Meisterschaft knallen die Kaffees aber vermutlich zu wenig. Nicht falsch verstehen: Mir sagen sie sehr zu, aber sie stechen nicht heraus, sondern bestechen durch ihre Ausgewogenheit.
Rauls Filterröstung fand ich im Switch am besten: 15 s heiss anbrühen, ablassen und dann geöffnet den Rest in 1:30 langsam aufgiessen. 15 g auf 250 ml, gemahlen mit 30 clicks.
Sophias Espresso kam bei mir mit der Ascaso im Einersieb (LF von mokaconsorten) mit 8 g bei 94 Grad und 25s am besten raus. Butterkuchen. Gemahlen mit DF 64 auf 4.
